Nutritious Pancakes!

I am turning Tuesdays into how to make your diet a little healthier  day with info and recipes.

OK since I got pregnant the first time I started thinking that even when I was eating something that I craved and was fattening it also had to be nutritious. I started changing the way I baked. I started thinking about what I was putting in my body. No more empty calories.
I started by using whole wheat instead of white flour when I was baking. Then I found Spelt flour and did some research. Spelt is better for you than normal flour. It is full of  B vitamins and it is easier for the body to access them. Even people that can´t eat wheat flour don´t seem to have a problem with Spelt. SO I switched to Spelt. You can get it at any health food store. I then started to put a little bit of flax seed to everything I made and after that I started adding Wheat germ. Which I will explain the health benefits of later.

So when I crave pancakes in the morning this is what I make:

3 eggs
1/4 cup milk
1/8 cup sugar
tsp olive oil
tsp vanilla extract (the real stuff)
1/4 tsp baking powder
1/4 tsp baking soda
1/4 cup spelt
1/8 cup wheat germ
1/8 cup flax seed

I add everything in this order but I usually just eye the ingredients and if it is too thick after I add the wheat germ then I just add a little more milk.
This usually makes about 3-4 pancakes which feeds my family in the morning.

I like to top with a little butter, strawberry jam and whipped cream while hubby likes his butter and syrup. O just likes what ever we are eating and runs between us to get a bite here and there.
